Our kids love rolling up their sleeves (and their lunch) and I mean there are worse things in the world than a few bits of stray sticky rice around your kitchen right? We even whip this up fresh before school some mornings, to be honest it’s usually the morning after we have chicken schnitzel for dinner, because that’s my kids sushi go to – but you can load it with many versatile and easy fillings!

Check it out – add a few ingredients to your next shopping list and get stuck in with the kids this World Sushi Day, or any day. Fill the lunch boxes or the dinner table. Got a train set? You could even make your very own sushi train. For the super health conscious, you could even use brown rice – but yeah, my kids are not eating that.

To make enough sushi for four kids lunch boxes you’ll need:

1 cup sushi rice

3 sheets sushi nori (seaweed paper)

1 sushi mat (or you might like to use a sushi press)

2 table spoons sushi seasoning (or make sushi su with 2 table spoons rice vinegar, 2 teaspoons sugar + pinch salt)

Suggested fillings:

Panko crumbed chicken schnitzel, avocado slices, kewpie mayonnaise, tinned tuna, cooked prawn, cucumber sticks, capsicum sticks, left over roast chicken, smoked salmon, cream cheese, sesame seeds, pretty much any thing you feel like putting in and rolling up……

Steps:

Cook your rice (can be done ahead, but warm rice is also fine). You can use a rice cooker or use the stove top absorption method. Follow your packet instructions or this is what we do:

Absorption: 1 cup rinsed uncooked rice and 1+ 1/2 cups of cold water into a saucepan with a lid on it. Bring to the boil, turn down to a slow simmer and leave it for 15 minutes. Remove from heat and let it cool (lid off) for 10 minutes.

Mix in 2 tablespoons of sushi rice seasoning, or your home made vinegar sushi su (give it a taste, some people like 3 tablespoons – less is more for us.)

While your rice is cooking, prep your sushi fillings. Think veggie strips, and maybe a protein.

We like to panko crumb strips of chicken breast. You could buy chicken schnitzel already crumbed. Even better, plan your dinner the night before to include left over sushi fillings. Some kids like it as simple as a strip of cucumber or avocado only.

Place a sushi mat on your clean bench – sticks running horizontal. Place a sheet of nori shiny side down.

Using wet hands, press a thin layer of cooked cooled rice all over the sheet, leaving a 3cm wide strip along the edge furthest from you.

Place your fillings along the middle of the rice in a line. Stack them on top of each other, or keep them close together. Don’t forget to add a generous line of mayo – if you are that way inclined.

Now we roll!!!! Hold filing in place while you roll the mat over to envelope the rice and filling. Roll it up with gentle pressure, imagine you are rolling wrapping paper back onto the roll.

Unroll the matt and use a sharp knife to slice sushi into 1.5cm rounds or larger rolls.

Our tip if you are sending in school lunchboxes, leave them as long rolls and tightly glad wrap them to keep the rice soft and fresh, slice when packing lunch boxes, or simply cut the long sushi into two 10cm lengths and send bigger.

Don’t forget to serve with your favourite dipping sauce, some pickled ginger, soy or perhaps wasabi for the brave, and then stuff that sushi into your head flat out!

(We like to eat these with in 24 hours for freshness, we also like to wash our drink bottles out every day, but now I’m just bragging honestly.)

We actually decided to send this lot of cookies out to KiA Dad Tim and what better option to select than printing edible photos of his own face on a cookie. YOUR HEAD ON A COOKIE. YEP. You can also have embossed cookies, party cookies, wedding favours and if you ask really nicely Nicole might even make you a custom birthday cake, she’s pretty talented. Crafty and popular, so be organised – this is a hand made artisan product, not a same day delivery – I bet she already has half of next year booked! These cookies were buttery with the perfect amount of crispness and sweet as the day at home with a toddler is long. It’s no secret we are long time Kytons lovers, these cookies are crisp and delicious. Perfectly made to share with friends in chocolate chip, macadamia and white chocolate, butter shortbread fingers or Christmas varieties. Try stopping at just one! The best part? Holey Kingston Biscuit! Golden crunch oat biscuits sandwiched together with a rich chocolate filling, get in my belly. These oversized home made Kingston’s are everything. There are a lot of perfect bikkies coming out of this very talented woman’s kitchen, but we fell in love with these monsters at one of 91¹û¶³´«Ã½’s most on fleek new venue’s What The Croque! Café and well, we wouldn’t leave until we had the details. Now, let’s not judge KiA Dad Tim, but I think he consumed more of these than was probably entirely necessary. Seriously Some one should win Australian of the year for these. Apparently the original Kingston dates back to the early 1900’s and is actually and Australian biscuit. 

Bean & Bikkie Co. Ginger Bread Cafe

Everyone loves gingerbread. The smell is like a magnet for the food enthusiast, drawing you in off the street like a mermaid’s song. We have long been admirers of Bean and Bikkie Co and are sad to see they are no longer in Hahndorf, however we have popped past their Beulah Park location this week (top of The Parade) and it’s nothing short of brilliant. Made on-site, by hand, using the finest locally sourced ingredients, this would have to be right up there with the best gingerbread on offer in SA. They have a huge range, which allows you to really cater your pick to your budget. We couldn’t go past these huge reindeer on a stick and thought for $7.50 it was excellent value. We love the complimentary gingerbread cookie provided with every coffee too plus you can eat here and the food is great. Make a visit here your Christmas tradition, or you know, all year around is good too.

This is a beautiful success story of a small South Australian mother and daughter business outgrowing their home kitchen some years ago and now operating commercially in North 91¹û¶³´«Ã½. Supplying Cafe’s and counter tops, what a lot of people don’t know is that public orders are also most welcome. With an extensive range the best thing to do is scroll their functional website to find your favourites. These travel and store well and are the most professionally individually packaged cookies we have found, while still ringing true to a gorgeous hand made quality and taste. 10/10 for this product.

We found another fun use for those [slightly annoying but ever consuming] trending pop it figit toys. Use them as a chocolate mould! Look, we are not going to claim it as our own idea, but we did have to give it a crack when we came accross it online, and we are pretty chuffed with the results.

What a fun school holidays idea!

What you will need:

One or more pop it figits, washed in warm soapy water, rinsed and dry. [We like to buy from 91¹û¶³´«Ã½ business ]

A block of your favourite chocolate

Enough M&M’s to fill as many pop it holes as you desire [I mean how many is ‘enough’ when you are a kid? Go the party sized bag.]

Microwave proof jug or dish to melt your choccy – oh yeah and a microwave, although honestly we don’t have one and melted our chocolate over a water bath, same same – what ever spins your wheel.

Rubber scraper or spoon

Instructions:

Put an M&M in each hole of your pop it. You could also use nuts or sprinkles, we found smarties too big.

If you have OCD like we do, the M&M logo needs to face down so as you can see it when you turn the chocolates out of the mould.

Melt you choccy of choice. Remeber slowly slowly with chocolate. Try 20 second bursts in the microwave and stir in between.

Tip melted chocolate over the M&M’s in the mould, smooth it over / level it off

Place in fridge 30 mins +

Carefully turn out your chocolate rows and consume immeadiately. Best enjoyed by fighting siblings, especially when there is an odd number of chocolate rows.

When I fall for something (food mostly) I fall HARD. This little beauty is completely Gluten Free, but you know – do what ever. I never know what snack to make when the kids have GF friends over. Lisa has nailed it. Check out her little local page some time, dedicated to feeding a coeliac child.

YES it is all gluten free! You can switch it up if you don’t have that need – but we think this looks pretty awesome regardless.

GF Pancake Stack

Gluten Free Buttermilk Pancake Recipe

1cup gf sr flour

1/4 cup gf plain flour

1 tbsp caster sugar

1 cup buttermilk (or milk or *milk with a dash of white vinegar left to sit for five)

2 eggs

Smidge of butter for cooking

we call this ‘smother and eat’

Does any one REALLY need a method for pancakes…..ah well, here goes:

1. Heat pan over medium heat. Melt butter to grease. 2. Reduce heat to low and pour approx 2 tbsp of batter into pan. 3. Cook until bubbles appear and surface appears to dry out a little. 4. Flip pancakes over; cook until lightly browned. 5. Transfer to board, top with your selection of goodies. 6. Smother in treats and eat with face hole.

*legit according to my 94 year old neighbour Betty, milk with a dash of white vinegar turns into buttermilk if you leave it sit for five minutes or so. Who am I to question it, 94 year olds surely know their shit so I am taking it as gospel.

2 cups SR Flour

Pinch of salt

1/2 cup milk

1/4 cup water

1 tsp sugar

30g chopped cold butter

suggested optional flavours

Handful of:

Frozen raspberries and white chocolate chips OR

Frozen or fresh blueberries OR

Sultanas OR

Grated cheese and chopped chives

Rub in the butter

METHOD:

Place butter and flour together in a large bowl and rub with your fingers until resembles breadcrumbs. Add sugar, milk and water and chosen flavour, if any, and stir until a sticky dough. 

Place dough on a floured surface and knead gently into a ball, then squash or roll it to 2cm thickness, cut with a cutter and place in a greased or lined tin. Brush with milk to glaze and bake for 12-20 mins at 200 degrees, this will depend on your oven so watch them!

Serve with butter and enjoy!

Or, alternatively, you can just eat them yourself so that Santa doesn’t get too full and get stuck in the chimney.

Ingredients:

  • 3 Cups of flour
  • 125 grams of melted butter
  • 1/4 cup condensed milk
  • 1/4 cup white sugar
  • m and m’s

Method:

  • Preheat oven to 180 degrees
  • Line a tray with baking paper
  • Melt butter in microwave for 15 seconds
  • Add sugar and mix to creamy
  • Add flour to a bowl
  • Add condensed milk and butter mix to the flour
  • Mix well
  • Roll into approx. 2 inch balls and flatten to look like biscuits
  • Add m and m’s to the top of the cookies
  • Place in oven and bake for 15-20 mins
